Chile Relleno Breakfast Casserole

Want something different and super-easy for your breakfast crowd?  This recipe will feed the whole gang at once, or you can do what I do and divide it up and freeze for later!  This can be assembled ahead of time and refrigerated until you’re ready to bake it – it’s perfect for Christmas or New Year’s morning!

You will need:
10 Beaten Eggs
16oz Sour Cream
2 cups Shredded Cheddar
1 pound breakfast sausage, browned
24 ounces Diced Green Chiles

Brown breakfast sausage and then mix all ingredients together in a bowl.  Pour into a greased 9”x13” (or two 8”x8”) baking dish.  Bake at 350°F for approximately 40 minutes or until a knife inserted into the center comes out clean.  That’s it!

Serve with a dollop of sour cream or guacamole (or both) and warm tortillas.  Enjoy!

  1. I LOVE this! This would be great to make ahead of time, for the morning after a holiday party! Eggs are great hang-over food and it would be ALL DONE. Totally pinning this recipe!
