Not Down For the Count, Yet.

Holy Moly! It's been OVER a week since I sat at my computer, and my fingers on the keyboard feels foreign!  I have a ton of things to catch up on, here in the virtual world and the real world.

A week ago I went to the ER unsure if my stomach pain and misery was real or if I was the biggest wimp in the world.  Turns out I'm no wimp.  I got my very first CAT Scan and Surgery that same day!

Turns out my appendix decided it no longer liked residing in my abdomen and ruptured.  One surgery, three days in the hospital, lots of morphine and IV antibiotics and an extraordinary amount of whining later...here I sit.  A woman with a mountain of laundry to do, a dirty kitchen and a very loving family!

Some other stuff happened in there in between the doses of pain pills and antibiotics...I'll fill you in as I remember the highlights.

I hope you all had a very Merry Christmas and that Santa was kind to you and yours!!

I'm back!  Not down for the count, yet...

Biting My Tongue and Putting on My Christmas Spirit

Ho Hum...I haven't written a blog post in Fooooooorrrrrevar!  Oh well.  I'm in the middle of testing out a bunch of products you're going to LOVE when I tell you about them.  And also, surviving life...yeah, that takes skill and talent and lots of alcohol some days!


Anyway, I was perusing Facebook Thee Debil earlier and I'm just amazed at some of the people I associate with!  I'm thinking it's time to clean out my friends list!!

I mean, between the people who gladly and confidently share their false statistics trying to assert that more than half of the American population is LAZY and that's why the rich are getting richer and the poor are getting poorer and the people who don't know the difference between there, they're and their...I'm ready for a damn drink going to pull out my hair!

I'm wondering if all this access to social media is good for our country.  I mean, some days I look at the wealth of information easily available on the internet and I'm amazed.  I used to have to write reports for school using a public library's resources and the Encyclopedia Britannica set we had in our home that was older than me!  I had to use a CARD CATALOG to find something I needed in the library!  And now there's Google. And Bing. And whatever other search engines are out there.  (I'm a Google girl - sue me!)

In 2.3 seconds you can Google how many people are receiving disability benefits - and then you can Google the US population - then you do a little division and "Voila!"...approximately 3.5% of the US Population is receiving disability benefits from Social Security.  NOT 51%!!  Holy hell that's a BIG difference!  So, why would you share a statistic like that without KNOWING it to be fact?  Why wouldn't you just educate yourself rather than rely on a news station broadcasting skewed facts information bullshit?

People!  The information is out there!  Avail yourselves of it!  Form your own opinions!  Listen to BOTH sides of an argument and then decide what makes sense to you.  And QUIT JUDGING EACH OTHER!!

Here we are in the middle of the "Holiday" Season - everyone I know screams about commercialization of the holidays and "getting back to the meaning of Christmas".  A week from now (if not sooner) our Facebook Debil walls will be full of posts from our friends and associates (and fellow internet farmers) reminding us of "The Reason for the Season!" And yet we sit in judgement of each other constantly.  I do...I know I do.  I'm imperfect.  But I'm trying, dammit!

Let's quit judging each other and just have some empathy.  OK?  I will if you will.  I'll leave my chronically-misspelling-can't-use-correct-grammar-to-save-their-life friends alone and just smile when I see that they've used "their" instead of "they're"(YET. AGAIN.) if you'll quit telling me that the disproportionate distribution of wealth in the US is because half the people in our country are LAZY.  OK?  Deal?

Make Your Own No-Sew Tutu or WIN One!!

A few months ago, I helped a friend make a tutu for her daughter's dance recital and just fell in love with the cuteness!  I enjoyed making a few more tutus in my spare time.

Today I'm showing you how to make your own and giving you a chance to WIN this custom tutu created by ME!  The best part - there's no sewing involved!  The only tools you need are scissors!

To make your own tutu, all you need is a pair of scissors, an elastic headband and tulle - the headbands can be found at your local Wally World in the hair care section (ours even has them in the craft section near the tulle) and the tulle can be found in the craft section.  I used black and white tulle from the wedding section for a "checkerboard" tutu I gave to a friend and I used super-cute red tulle with glitter on it over pink tulle for the tutu you can enter to win!

Once you have your tulle and headband, prepare to assemble by cutting your tulle into strips - I found that I preferred strips that were approximately 6 inches wide and 30 to 36 inches long (the tutu will be half the length of your strips, so if you're making it for your own child measure from their waist to their knee and make strips twice that length).  I cut tulle until I had a mountain of strips ready to go and then I started assembling!


To assemble the tutu, I prefer to stretch the headband around a book and then add loops of tulle.  It's actually so easy to do you could enlist your child for help in creating this!



Simply fold your strip of tulle in half, creating a loop in the center then pull the loop up through a hole in the headband.


Next, bring the "tails" of the tulle up and through the center loop of the strip and pull it tight.

Chile Relleno Breakfast Casserole

Want something different and super-easy for your breakfast crowd?  This recipe will feed the whole gang at once, or you can do what I do and divide it up and freeze for later!  This can be assembled ahead of time and refrigerated until you’re ready to bake it – it’s perfect for Christmas or New Year’s morning!

You will need:
10 Beaten Eggs
16oz Sour Cream
2 cups Shredded Cheddar
1 pound breakfast sausage, browned
24 ounces Diced Green Chiles

Brown breakfast sausage and then mix all ingredients together in a bowl.  Pour into a greased 9”x13” (or two 8”x8”) baking dish.  Bake at 350°F for approximately 40 minutes or until a knife inserted into the center comes out clean.  That’s it!

Serve with a dollop of sour cream or guacamole (or both) and warm tortillas.  Enjoy!

Chicken Pot Pie Pockets–Eat Some Now, Freeze Some for Later!

I’ve been doing a lot of cooking from scratch lately.  I guess, growing up in a world full of convenience foods I just never realized how easy it is to cook with ingredients I keep mostly on hand rather than eating something pre-made where half the ingredients are things that I don’t know what they are and can’t even pronounce!  I like knowing exactly what is in my food!


My Chicken Pot Pie Pockets are a perfect example – and they put the commercially available frozen “pocket” meals to shame!  This recipe makes about a dozen pockets; plenty to eat some fresh for dinner and freeze the rest for future use.  And they’re fairly easy to make!

You will need:
For the Crust: For the Filling:
2 1/4 c. warm water
3 tbsp. sugar
3 1/2 tsp. yeast
4 3/4 cups flour
1 1/2 tsp salt
2 chicken breasts, cut into small bites
4 tbsp butter
1 bag frozen peas & carrots
3 cups cubed potatoes (2 or 3 medium potatoes)
1 medium diced onion
3 cups chicken broth
1/4 cup flour
salt & pepper to taste


First, make the crust so it has time to rise while you do the rest.  I use this crust recipe for a variety of yummy recipes, including cheese sticks and garlic knots (I’ll share those recipes soon)!  The dough has a sweet slightly-yeasty flavor and is super easy to make.

First, mix the warm water (not too hot or you’ll kill the yeast) with the yeast and sugar and set aside for 5 minutes until it’s bubbly and frothy on top.  While the yeast gets happy munching on the sugar water, measure out your flour and salt into your mixer bowl (I use my stand mixer with the dough hook attachment to make my dough – I highly recommend doing it that way, but you can do it by hand, you’ll just have to get your hands dirty!)!  Dump your water sugar yeast mixture into the mixing bowl and blend until the dough forms a ball and pulls away from the sides of the bowl (if your dough is too sticky, feel free to add a little more flour as the mixer runs).

Cover the mixing bowl with a towel and place in a warm spot to rise for at least 10 minutes.  After the dough has risen, dump it out onto a well-floured surface and divide into a dozen dough balls.  Roll each ball out to a 7 inch circle; you can do this as you are ready to fill the pockets or ahead of time – it’s up to you!


Now, for the filling, prep your ingredients by cutting the chicken breasts into small bites, dicing the onion and peeling and cubing the potatoes.  I place my potatoes in a small mixing bowl and microwave them for a few minutes to pre-cook them a little before I start cooking (probably about 3 minutes).

Melt the butter in a large sauce pan or a stock pot and then place onions and chicken in pan to cook over medium heat .  When onions begin to soften, add the potatoes and continue cooking, stirring regularly to prevent burning.

When the chicken is cooked, the onions are clear and the potatoes are soft add the chicken stock and frozen peas and carrots.  Stir to mix and bring to a gentle boil, still using medium heat.  Once the mixture is boiling, add the flour carefully by sprinkling across the surface and mixing in gently to avoid flour lumps.  Stir gently until the mixture thickens and add salt and pepper to taste.  Once the mixture thickens remove it from heat (it will thicken more as it cools, so remove from heat before it’s very thick).

I like to use parchment paper when I bake my chicken pot pie pockets because then I don’t have to worry about the pockets sticking; but if you choose not to use it,  simply coat your baking sheet with a light spray of non-stick cooking spray.  Also, it’s easiest to assemble these on the baking sheet because the dough is thin before it goes in the oven (it will rise while it bakes).

 

To assemble, place approximately 1/2 cup of the vegetable and chicken mixture in the center of a dough circle and fold the dough over the filling to form a half-circle.  Pull the top half of the dough to where it’s just shy of the bottom half of the circle and bring the edge of the bottom part of the dough up over the top edge and crimp together, sealing the pocket.

Assemble as many pockets as your baking sheet will hold and then bake in a pre-heated 375°F oven for 20 to 25 minutes, until the crust is golden brown.  Remove from the oven and allow to cool for a few minutes and then rub a stick of butter over the top crust until glossy (this makes them prettier and adds a little flavor, too).

I usually can fit three pockets on a cooking sheet, so I use two or three baking sheets and prep the next sheet’s worth of pockets while there’s a batch in the oven.  Then, we each get a pocket warm and fresh for dinner and freeze the rest.


To freeze, I wrap each pocket in cling wrap or foil after they’ve cooled and then put 4 or 5 pockets together in a gallon freezer bag.  To reheat, just microwave 60 to 90 seconds, depending on the power of your microwave.  These make a great, filling lunch on their own or a delicious dinner when paired with a side salad or a soup!  Enjoy!

Monday Mini-Rant: Vaguebooking


Can we talk about something that drives me absolutely batty? You're darn-skippy we can - this is my little piece of the internet and I decide what we talk about!  Today, let's talk about Vaguebooking.


I don't often just "go off" here, but today I've had it with people. Seriously. What the hell is wrong with you people? Why? Seriously, why? WHY do you feel the need to post these sad, pathetic status updates on Facebook that just scream out "Pay attention to meeeeee."??!!??

Seriously, people! WHAT is wrong with you?  Are you so sad and lonely that you just don’t understand how completely undignified it is?  Do you not understand how effing annoying is it when you read a Facebook status like this?



Doesn't that look ridiculous?  Of course it does. So stop it!

Have some self respect.  Seriously.  Even if you hate yourself and don’t care what you look like to the rest of the world, quit doing that shit to your friends!  It’s ridiculous and annoying.  If you need a friend to talk to, just effing say so!  There are probably people who would drop everything to be there for you if you’d just act like the damn grown-up you're supposed to be!

Instead of writing some silly “woe-is-me, but I’m not telling you why” bullshit for the whole world to read, pick up the phone and pretend you’re a contestant on “Who Wants to Be a Millionaire” and PHONE A FRIEND!!


And if you EVER consider writing “FML” as a status update on Facebook again, do me an effing favor:  slap yourself and then immediately go deactivate your Facebook account.  You’re not mature enough to be using the internet!

Welcome to the Ranch Snack Crackers

Need a quick and tasty snack?  These yummy little crackers are packed with flavor and take just a few minutes to prep!


You will need:
  • One 1-oz Packet of Ranch Style Dressing Mix
  • 1/4 Cup Vegetable Oil
  • 10 ounce bag of Oyster Crackers
  • 1/2 teaspoon Dill
  • 1/4 teaspoon Lemon Pepper
  • 1/4 teaspoon Garlic Powder


It’s so easy to make – ask your kids to help you!

Mix all ingredients except the crackers in a large bowl.  Add the crackers to the seasoning mixture and gently mix to coat all the crackers.  Spread evenly on a baking sheet and bake 15 to 20 minutes in an oven preheated to 250°F, turning gently after 10 minutes.  Allow the crackers to cool and then marvel in their deliciousness!!

Optional:  Add some pretzels in the mix! Yuuuuuummmmm!

Right Now. Today.



Right now it is 6:08 in the morning where I am.  My house is quiet except for the sound of my fingers clicking on my laptop, the clock on the wall ticking away and my dog wandering through the kitchen to check if she left any kibble on the floor; maybe one rolled up under the edge of the cabinet.

From where I sit, I can see out the wide glass double doors facing southeast and the light of the day is just beginning to break.  A yellowish-gold creeps higher and higher into the sky, lightening it as the darkness moves higher and higher...

DH and Buddy are snuggled in our bed just above my head, a mountain of pillows creating a barrier on my side of the bed so Buddy doesn't roll off the edge.

I'm sitting here, with a hot cup of strong coffee by my side, in my favorite robe that DH bought me for our very first Christmas together and my wet hair wrapped turban-style in a yellow towel.  I can't remember the last time I had the house to myself!  I've been so exhausted for so long that just the thought of dragging my tired bones from our bed even a minute before it was necessary made me even more exhausted.

But today I awoke at 5am, and though I laid there wondering if I would drift away once again for just a bit, I eventually arose and seized this day!  I have a lot planned for today; I'll share the story with you once I know how it turns out, but so far my predictions and expectations of how it would be have been far, far different than the reality.

I have a tendency to expect the very worst.  It's a defense mechanism; built after years and years of disappointment.  I hate that I do it.  It's really the easy way out...if you don't expect much, you don't feel disappointment.  And if you don't feel disappointment you don't go through the mental dance of beating yourself up for having hope when you know you don't deserve for things to go well anyway.  That's the lie you tell yourself...

But when you don't have high hopes, you miss out on the joy of anticipation, too.  The excitement of all the what-ifs!  I rob myself of all the positive hopes and good feelings that come along with it.  And I need to stop.

Right now, today, I need to feel happy.  I need possibilities...

Searching for Grace - Five Minute Friday

Today I'm joining a cool prompted-post link up at Lisa-Jo Baker's Five Minute Friday.  The point is to take her prompt and write for five minutes and then publish.  Today's prompt is "Grace".  Here I go...


What is Grace?  It can be a quality of a person or it can be a gift.  Today I discuss the gift...

According to the Christian teachings as I understand them, Grace is God's gift to all those who accept his love and follow Christ.  Grace is a gift given to us with no tags attached, you simply have to accept it.

Grace is the ultimate gift; the gift that says no matter what you've done, no matter what you've endured, no matter how you've slid into the place you are, YOU ARE WORTHY OF THE ULTIMATE LOVE!

So, my thought is, how can we live with grace for the world around us?  How can we bestow this same sort of loving forgiveness to all the mangled, damaged, hurt people around us?  And maybe even more important:  How can we bestow this same kind of love to ourselves.

Non-judgmental, completely pure and without needing to be earned...we all deserve GRACE, regardless of our religious beliefs.  Grace isn't just a Christian concept.  It's a universal concept.  The idea that we all deserve to be accepted and loved for who we are right this minute.

Forgiving everything that has come before...

I struggle with Grace...

I struggle to accept it.
I struggle to bestow it on others.
I struggle to have it for myself.

I need more Grace in my life.  We all do.

This week's Featured Blogger is Joules from Pocketful of Joules.  Joules has been blogging since March 2011 on everything from losing a job, finding a new one, selling a house, buying a house, moving twice, getting pregnant and popping out a baby 2 months early.
